Chocolate Cookie Dough Rice Bites
Rice Crispy Layer -
2C brown rise crisps
5 medjool dates
3Tbs coconut oil
1/2Tsp vanilla
Blend dates, coconut oil and vanilla until creamy in food processor. Mix with crisps in a bowl until well combined (helps to add crisps gradually). Press mixture into baking pan and refrigerate.
Cookie Dough Layer -
2/3C cashew butter
3Tbs maple syrup
3 Tbs coconut oil
1Tsp vanilla
Blend everything until creamy. Pour over rice crispy layer.
Chocolate Layer -
1 dark chocolate bar (melted and cooled)
2/3C cashew butter
1Tbs coconut oil
1Tbs maple syrup
Melt chocolate in glass bowl over pot of boiling water. Let it cool before mixing with cashew butter and oil. Pour mixture over last layer and sprinkle with sea salt. Chill in freezer for 1 hour. Let them thaw for 20 minutes before cutting into squares. Store in the fridge for the chewiest bites. Enjoy!
