Spinach and Fruit Salad
Enjoy as an entree or side salad with grilled chicken, fish or beef.
Ingredients --
10 oz fresh spinach
1 cup chopped celery
1 cup dried cranberries
1 can (15 ounces) mandarin oranges
1 cup of pomegranate seeds (optional)
1 large Granny Smith Apple
1 teaspoon lemon juice
1/2 cup pecans
Optional: Feta cheese crumbles and Orecchiette pasta (1 cup, cooked)
Dressing --
4 tablespoons olive oil or vegetable oil
2 tablespoons apple cider vinegar
2 tablespoons white wine vinegar
2-4 teaspoons white sugar (Or honey/Stevia to taste)
1/8 teaspoon paprika
1/8 teaspoon onion powder
1 tablespoon poppyseeds
Combine and chill until ready to toss the salad.
